



The young vines for the Grillo wine grow in calcareous soil in Masseria del Feudo’s Vigna Giovane vineyard near Canicattì to the southwest of Caltanissetta in central Sicily at an altitude of 480 m. The vineyards are cultivated according to the principles for organic farming.
The grapes were manually harvested, carefully sorted, and destemmed, followed by a short cold maceration and fermentation using indigenous yeasts in stainless tanks for 10 days at 17°C. The wine matured for 6 month on the lees in the tanks followed by 3 months in bottle.
