Cervaro Della Sala 2021 - Umbria I.G.T. - Antinori
The Antinori family has been committed to the art of winemaking for over six centuries since 1385 when Giovanni di Piero Antinori became a member, of the “Arte Fiorentina dei Vinattieri”, the Florentine Winemakers’ Guild. All throughout its history, twenty-six generations long, the Antinori family has managed the business directly making innovative and sometimes bold decisions while upholding the utmost respect for traditions and the environment.
Castello della Sala is located in Umbria, near the historic city of Orvieto – a region exceptional for producing white varieties. Castello della Sala, a magnificent medieval manor with 170 hectares of vineyards located between the Paglia river and the summit of Monte Nibbio. The clayey and calcareous soil vineyards are located at an altitude of 220 – 470 m.
This wine is produced from Chardonnay and Grechetto grapes, harvested overnight and chilled to preserve their aromas, prior to pressing and destemming. The two varieties mature at different times, and are fermented and refined separately. Chardonnay is briefly macerated cold for 4-6 hours, and then fermented for 18 days in new French oak barriques, where it remains on its own yeasts for 6 months. The Grechetto, however, is fermented and refined in stainless steel. The wine is then assembled and, once bottled, rests for 10 months in the historic cellars of Castello della Sala.
Colour: Pale yellow with notable greenish highlights.
Flavour: Its intense, complex nose shows notes of citrus fruit, pineapples and acacia blossoms that blend harmoniously with hints of vanilla and flint.
Taste: Generous, refined and well structured; pleasantly savory notes are well-balanced by typical sweet sensations of hazelnut butter. The 2019 vintage will be remembered as one of Cervaro della Sala’s greatest vintages.
