Piano dei Daini 2016 - Etna Rosso D.O.C. - Tenute Bosco
The Nerello Mascalese and Nerello Cappuccio vines for the Piano dei Daini Etna Rosso wine grow in the volcanic sand in the Tenute Bosco vineyards on the northern slopes of Mount Etna near Castiglione di Sicilia at an altitude of 600 m. The mineral composition of the sandy soil makes it permeable, ideal for oxygen and water circulation, also in deep layers. The vines have an age of around 15 years.
The grapes were manually harvested followed by a careful selection of the grapes.
Following destemming and a soft pressing was the mixture transferred into steel vats where the vinification took place at a controlled temperature for 15 days with daily cycles of cap punch-downs to assure correct extractions of flavor and color from the skins. After the malolactic fermentation the wine was matured in oak barrels (french tonneau of 700 liters) for 10 months, then in steel vats for about three months and a minimum of 6 months in the bottle.
Longevity is 5-10 years.

- Pasta dishes, tasty meat dishes and medium aged cheeses. Serve at 16-18 C.
