Etna Bianco DOC from pioneering Cottanera winery on Mount Etna is a beautiful white wine made from Carricante grapes from 30 years old vines growing in the mineral rich volcanic soil at an altitude of 680 - 750 m on the northern slopes of the volcano. It is a straw-yellow wine with citrus notes of lemon and cedar mixed with orange blossom and jasmine. The taste is full bodied, fresh and mineral with a lovely acidity.

The Cottonera production philosophy is to create an enterprise model which brings tradition and innovation together in the vineyards, as well as the winery. In the vineyards grapes are grown without an irrigation system and nearly all operations are carried out by hand. On the 65 hectares of vineyards both autochthonous and international varieties are grown. The land is unique and gives rise to an extremely variable diversity of vines.

The grapes were harvested manually and carefully sorted. Following a gentle destemming the wine fermented at controlled temperature. The refining of the wine lasted 6 months in stainless steel tanks followed by ageing in the bottle.
