The young Nero d’Avola vines for the Sely wine grow in calcareous soil in Masseria del Feudo’s Vigna Giovane vineyard near Canicattì to the southwest of Caltanissetta in central Sicily at an altitude of 500 m. The vineyards are cultivated according to the principles for organic farming.
The grapes bunches were manually harvested, carefully sorted followed by a short maceration during pressing. The must went through a partial fermentation using indigenous yeasts in stainless steel tanks. Following this the wine was bottled and allowed to finish the fermentation in the bottles thereby producing a semi-sparkling wine.
