Principessa Gavia from world famous Banfi’s Piemonte winery, which produces a wide range of unique sparkling wines. This is a pale straw yellow sparkling wine with a very fine and lively foam. The wine is made according to the Metodo Charmat. It has an intense and fruity aroma and the taste shows freshness and vivacity of the bubbles which make it pleasant and easy to drink.

Banfi was founded in 1978 thanks to the will of the Italian-American brothers, John and Harry Mariani. From the beginning, the goal of the brothers was to create a state-of-the-art winery combined with the most advanced science in the vineyards for the production of premium wines. In those years they also purchased the Bruzzone estate, a historic winery in Piedmont. This winery was established in 1860 and specialized in the production of sparkling wines, today it is known as Banfi Piemonte. The strong link to the region is evident in the selection of wines produced by Banfi Piedmonte, all expressions of principal indigenous varietals and Metodo Classico bottle fermented sparkling wines.
The wines of Banfi are born of a passion and love for the unique terroirs, from continuous research, and from the intimate knowledge of different territories and the ability to combine time tested and respected techniques with innovative solutions in both the vineyard and the winery.
The vineyards extend between the towns of Novi Ligure and Acqui, over an area of 124 acres, of which 114 are under vine. The Cortese di Gavi vines for the Principessa Gavia sparkling wine comes from a Banfi Piemonte single vineyard in the hilly Piemonte region. This wine is produced by the Charmat method where the clean must from the first soft pressing is fermented on the skins at a controlled temperature of 18 °C and then cooled at 0 °C during the last part of the alcoholic fermentation taking place in stainless steel tanks for two weeks. Storage at low temperatures conveys a slight natural effervescence to the wine. The wine aged in stainless steel tanks on fine lees for about 3 months.
