The vines for the Gaudensius Blanc de Blancs grow in each end of Sicily and under very different climatic conditions. The chardonnay vines grow in Firriato’s Borgo Guarini estate east of Trapani in western Sicily in clayey soil at an altitude of 200 m. The carricante vines grow in vineyards at Firriato’s Cavanera Etnea estate on the northern slopes of Mount Etna at an altitude of 650 m and in volcanic soil.
The grapes were harvested by hand, meticulously sorted, destalked and pressed followed by the first fermentation in stainless steel tanks. The second fermentation took place in the bottles according to the classic method with traditional hand riddling (remuage) on pupitres and dégorgement à la glace. The wine matured in the bottles in contact with the yeast for at least 32 months before final corking followed by some months in the bottles.
Longevity 3-5 years.
