The vines for the Rich Champagne grow in chalky soil in the Veuve Clicquot vineyards in the hilly areas in the Champagne district. A north-facing position leaves the vines exposed to variations in the already cool climate such as frosts. The poor substrate also forces the vines find their own strength. All of which contributes to the key characteristics of the champagne – its freshness and mineral notes.
This champagne was produced according to the strict specifications for production methods for champagnes. The grapes were harvested by hand and meticulously sorted. The grapes were softly pressed and the first fermentation took place in stainless steel tanks at low and controlled temperature. The second fermentation took place in the bottles in contact with the yeast for at least 12 months before final corking.
